Domaine Tissot Vin Jaune en Spois 2014

This is a wonderful vin jaune, understated in a way but not without serious complexity and detail in tow. Saline, briny, salted cashew and green apple fruit characters, brilliantly refreshing, mellow and quietly complex. It is an approachable vin jaune, best drunk with mature Comte cheese, delicious in youth (now!) and yet cellar worthy too. en Spois is a great wine of the regional benchmark style for approachability in youth.
